Gourmet Recipe: Indonesian Pork Tenderloin

Ingredients (serves four)

Pork tenderloin (800 gms)Pork tenderloin

For marinade:
1/2 tsp Coriander, ground

2 cloves Garlic, chopped finely

1/4 cup Apricot preserves

2 tbsp Peanut butter, creamy

1/4 cup Soy sauce

1/2 tsp Black pepper, ground

1/2 tsp Red chilli pepper flakes

1 tbsp Rice wine vinegar

2 tbsp Vegetable oil

1/4 cup Orange juice

For finishing:
1 Lime

Fresh coriander

Method:
Marinate the pork tenderloin for three hour in all the ingredients. Get a pan very, very hot and sear cook the meat for ten minutes. Leave to rest for five minutes, cover with lime juice and fresh coriander. Excellent with Brads Two Brothers Sauvignon Blanc Semillon 2012.
